Hirtshals Marinated Herring
Description: Hirtshals herring old-fashioned matured herring follows the traditions of how to use salt for storing for example meat and fish for a long time.
The raw material is typically made by cutting the head of the whole fresh herring, which is then placed in a barrel of salt. If it is an old fashioned spicy herb, add spices and sugar. The intestines still in the herring contain enzymes, which cause the fish to mature.
The barrels are placed on cold storage for maturation and after 6 months they are ready for filleting. The fillets are laid back in the salt layer and the barrel is again placed on the cold store and ready to be finished. Depending on the nature of the fresh produce and the storage temperature of the cold store, the raw material can last a very long time.
The further course follows other herring products, where the salt layer is drained from and then packed on glass with spices and a make that gives the product the final taste.
Basically, the old fashioned has a softer texture and is darker than a herring that has been matured in an vinegar.
